3 Easy Chicken Marinades

Who doesn’t love an easy chicken marinade??? I certainly do. If you thaw your chicken and prep your marinade overnight, just combine it in the morning and by dinnertime it is ready for the grill!

I found all these on Pinterest in the last year and they are so versatile. Part of the appeal is that the ingredients are already staples in my pantry so it’s super budget friendly. They take around 5 minutes to make, which is a HUGE plus when you’ve only got about 3 minutes to spare. The fajita recipe takes a little bit longer since you have to chop the garlic and juice the lime, but you could always use pre-chopped garlic and lime juice (it’s not quite as good as freshly squeezed lime juice in my opinion, but that’s just me!). For extra flavor, make some extra marinade to baste with while the the chicken grills.

With all of these, I like to make more chicken than I actually need and use the leftovers throughout the week in wraps, soups or salads. It also makes a healthy meal for the kiddo that I don’t have to cook the day of.

So here you go! 3 easy chicken marinades (in no particular order because I can’t decide which is the best).

Lemon Pepper

Course: Main Course, Marinade

Ingredients

  • 1 lb Chicken Breasts
  • ¼ cup Olive Oil
  • ¼ cup Lemon Juice
  • 1 tbsp Cracked Pepper
  • 1 tbsp Lemon Pepper Seasoning

Instructions

  • Put all ingredients in a mixing bowl and whisk together.
  • Pour into a ziplock bag with chicken and refrigerate until ready to cook.

Lemon Basil

Course: Main Course, Marinade

Ingredients

  • 1 lb Chicken Breasts
  • 2 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • 1 tsp Dry Basil
  • 1 tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Salt
  • ¼ tsp Pepper
  • ¼ tsp Oregano
  • ¼ tsp Ground Mustard
  • Dash of red pepper flakes optional

Instructions

  • Put all ingredients in a mixing bowl and whisk together.
  • Pour into a ziplock bag with chicken and refrigerate until ready to cook.

Fajita

Course: Main Course, Marinade

Ingredients

  • 1 lb Chicken Breasts
  • 2 tbsp Olive Oil
  • 1 Clove Garlic chopped
  • Juice from 2 Limes
  • 1 tsp Chili Powder
  • 1 tsp Sea Salt
  • 1 tsp Cumin

Instructions

  • Put all ingredients in a mixing bowl and whisk together.
  • Pour into a ziplock bag with chicken and refrigerate until ready to cook.

How amazing do these sound??? While the chicken is marinating, I like to flip it to make sure it is completely coated. Once it’s dinner time, I grill them at about 300-350 until the internal temp is 155. The chicken will continue to cook after you take it off the grill, so I like to take it off early.  It will come to temperature without ending up like a brick of chicken.
