Fajita Bowls

I LOVE breakfast and I LOVE finding new ways to eat leftovers. I don’t feel like I’m very good at re-inventing food to get more recipes from the same ingredients, so I was super proud of myself when I came up with this. It’s my favorite way to finish off rice and beans and you can make it your own by using whatever veggies & toppings you have in the fridge. Cheap+easy+ delicious = one Very happy momma. It’s not rocket science for some, but it is for me so I’ll pat take a Win whenever I can get it. This recipe is delicious but it can take some time to put together so make sure you have at least 10 minutes to spare before diving into this one. I’m listing the ingredients I used, but you can use whatever you have on hand. There’s no right way to make this. Adding grilled chicken or shrimp would be a great way to mix it up for lunch or dinner.


Fajita Breakfast Bowls

Ingredients:

  • Brown rice
  • Black beans
  • Eggs
  • Sauteed peppers & onions
  • Jalepenos
  • Spinach
  • Tomato
  • Shredded cheese
  • Salsa

Steps:

  1. Scramble eggs. I like to scramble eggs with milk, Tony Chachere’s, garlic powder, onion powder, and pepper.
  2. Reheat peppers, onions, beans, and rice (the beans and rice were fine in the microwave, but I reheated the peppers and onions on the stove).
  3. Combine and add your toppings of choice.
  4. Send me a Thank You bottle of champagne (or FB message, whatever).

Done! You can’t mess this up and you can create whatever bowl of awesome protein-packed breakfast you want. Plus, your fridge will be a little more empty when you’re done. Win, win, win.
