Life-Changing Strawberry Sauce

Yup. It’s true. I was watching The Pioneer Woman one morning (newly obsessed with her) and she was putting together a pancake bar with this sauce. I knew it was a must-have so later that week we had some friends over for breakfast and they let me try it out on them. Can I tell you that it was one of the best things I have ever made?!? I only made a quarter of the recipe since I was trying it out for the first time and I didn’t want a gallon of sauce laying around. Well, I’m an idiot.  Next time, I’m making the full amount and just eating it with a spoon.  Along with putting it on top of pancakes, you could also put the mashed strawberries IN the batter for strawberry pancakes. I put it on my kiddo’s toast the next day and he loved it too.


Recipe

4 lbs Strawberries, hulled (I halved them)

2 Cups Sugar

2 tsp Vanilla

1 lemon, juiced (about 3 Tbl of lemon juice)

  1. Place ingredients in a pot over medium-high heat
  2. Stirring constantly, bring it to a gentle boil and cook until strawberries are soft (about 5-6 minutes)image
  3. Once soft, mash the strawberries with a potato masher (or whatever you have that will really mash them up)
  4. Pour over a mesh strainer into a bowl and use a spoon to make sure you get as much juice as possible out of the fruit (save the pulp)
  5. Scoop out as much foam as possible and pour the sauce back into your pot. Add 1/4 cup of the pulp and boil again for 3 minutes over medium-high heat
  6. Skim off any new foam and let cool before placing into the fridge to thicken up (I warmed it up a bit before putting on pancakes)

This would be a great recipe to make and have on hand next time you have overnight guests or holiday visitors. They will be way impressed and think you did something super fancy and amazing for them (it’ll be our little secret that it is super easy and just as much for yourself). Enjoy!
